Recipe From The Cove Kitchen: Oysters Rockefeller

Cove Executive Chef, Douglas Walls, is serving up a delicious and fresh seafood recipe that many guests are claiming as their new favorite. Chef Walls loves to add his own twist to traditional recipes, and he doesn’t disappoint with his non-traditional version of Oysters Rockefeller, known around here as “Oysters Dougiefeller”!

Oysters Dougiefeller

6 shucked oysters
1 lb. spinach leaves
1/2 cup panko bread crumbs
1 cup hot sauce (Chef uses Frank’s Hot Sauce)
1/2 lemon juice
1 tbsp. minced garlic
1/2 cup shallot, finely minced
Salt and pepper to taste
1 cup olive oil
Sriracha sauce

Pour olive oil in saute pan and when hot, add garlic, sautéing for one minute. Add shallot and sauté for 2-3 minutes. Add the hot sauce, lemon juice and spinach greens and sauté until spinach is wilted.

Add panko bread crumbs, turn off heat, and season with salt and pepper.  Put the topping mix in the refrigerator to cool.  Once cool, place a good amount on each oyster.

Bake at 375 degrees for 10 minutes.  Drizzle Sriracha sauce on top and serve on a bed of sea salt.

You may have participated in our photo challenges in the past, but if not, it’s easy, and we hope you will join in and share through the lens of your camera (or smartphone in most cases)!  (Click here for a photo recap of our last photo challenge.)

Our 2017 Spring Photo Challenge begins Saturday, April 1st.

Here’s how it works:

Post one photo daily, using the daily prompts noted below, on Instagram or Facebook.  Don’t forget to use the hashtag #CoveSpringPhotoChallenge when you post your photo so we can all see what each other are sharing.

Not a picture taking pro?  Don’t worry, neither are we. All of our photos will be taken with an iPhone.  No fancy photography skills required!

Need some ideas of what to share? Post a picture of the blooming flowers, your favorite spring activity, a page or quote from an inspirational book, or a photo of the place where you find renewal.

Most importantly, have fun!  Take time to enjoy the lively buzz of spring.

FYI: Anyone taking part in the photo challenge may have their photos shared by The Cove and other participants.

Saturday Snapshot — The Ladies Take Over the Mountain

For the last 15 years, an amazing group of ladies from a church in South Carolina have been holding their women’s retreat at The Cove.  Each year is fun, with a creative theme, workshops, skits, exercise, prayer, and fellowship. It’s always a joy to see these ladies come together here, experiencing the love of God, away from the daily distractions of life.

Saturday Snapshot — Heart Work x 2

We give thanks that the Lord is the Great Physician, but as a staff, it is our goal to be prepared to help in medical situations when necessary.

This week, many of our staff were trained by a team from the American Heart Association on 1st Aid, CPR and AED.  We certainly don’t hope to use these skills, but are ready, should we need to.

On another note, we’d love for you to join us in covering the 121 military couples that will be on property this weekend for a Military Marriage Retreat.  Please pray for their hearts as they dig into God’s Word this weekend.  Please pray that they would enjoy sweet fellowship with other military couples.  And, please pray that each couple will return home inspired by God’s purpose for their marriages.

Find a bench in the woods to sit and spend time with God.
    Jesus said, “Come to me, all of you are weary and carry heavy burdens, and I will give you rest.” Matthew 11:28
  5. Impact. Allow God’s Word to impact your life. Maybe you need to draw closer to your Savior. Maybe you would like to hear from Him in order to make an important decision in life. Spend time meditating on God’s Word—it will never return void.
    “For the word of God is living and powerful, and sharper than any two-edged sword.” Hebrews 4:12
  6. Intercession. You have the privilege of going straight to the throne of God. Spend time in prayer for others in your family, your community and around the world. Prayer is powerful. Delight your heavenly Father by praying in Jesus’ name and without ceasing.
    “Pray at all times in the Spirit with every prayer and request, and stay alert in this with all perseverance and intercession for all the saints.”  Ephesians 6:18
  7. Instruction. The Bible is your very own instruction book. Use it to learn more about God, His people and how He wants you live your life.
    “Apply your heart to instruction, and your ears to words of knowledge.” Proverbs 23:12
  8. Inspiration. Do you have a decision you need to make? A move you are considering? A new project you are looking to embark on? Maybe you think your ministry needs to go in a new direction. Allow God to fuel you with His inspiration by spending time alone with Him prayer and in His Word. 
    “I will hear what God the Lord will say.” Psalm 85:8

We debuted our photo challenge in the Saturday Snapshot post
three weeks ago.

#InTheGardenPhotoChallenge was all about putting a spotlight on the aesthetic and spiritual beauty in and surrounding a garden.

On The Cove’s Instagram (@thecovenc) feed we shared
images from the newly opened Ruth’s Prayer Garden each day.

How it worked: We asked everyone to post one photo per day on their personal Instagram and/or Facebook that followed our daily prompt. Everyone then included the hashtag #InTheGardenPhotoChallenge in their post!

Saturday Snapshot – Retreats, Mountains, & Sunsets

It’s been a beautiful week here at The Cove. The daytime temperatures have stayed in the mid 60s to the low 80s without a whole lot of humidity.  Very nice!

The earlier part of the week was quiet here at The Cove (a great time for maintenance projects to be completed!), and then later in the week, we had a couple hundred come for a Samaritan’s Purse retreat for their site managers and volunteers. Here some of them are in full retreat mode enjoying time on the Training Center deck! (Photo taken from the prayer room on the 3rd floor.)

This next photo was taken just before 9 p.m. earlier this week at the chapel.

One of our lighting and audio tech guys took the photo as he was leaving the chapel and shared, “It was that magic moment when the light on the building and the light in the sky were balanced beautifully!”  He’s a lighting guy, so he knows what he’s talking about!  Isn’t this beautiful!

This last picture was taken on Friday afternoon from the deck off Billy Graham’s office on the 3rd floor.  Aren’t the mountains and lush forests of of Western North Carolina pretty!?

Saturday Snapshot – Stop & Smell the Roses

“I am the true vine and My Father is the gardener.” (John 15:1, NKJV)

In case you haven’t stopped to smell the roses this week, we’ve got you covered!  Of course, you’ll have to use your imagination and trust us that they do smell good…especially the pink ones.

Do you remember the video devotion our gardener shared here back in March?

Well, just look at the fruits of his labor!

The Kousa dogwood, also know as the Japanese dogwood, is a beautiful addition to The Cove’s spring landscape.  This variety of dogwood blooms a few weeks later than the native flowering dogwood, and the white star-like pieces are not actually flowers–they are modified leaves–and the green part in the middle is the actual flower.

The rhododendrons in May never disappoint!  This gorgeous group flanks the road as you drive through the gates.

These pretty blooms really remind us that God is in the details….in the garden and in our lives.

There’s nothing like Fall in the mountains of Western North Carolina!  Earlier this week, we took a drive around our property so we could share some of the beauty with you.

First, we’d like to share the drive up to our beautiful chapel and visitor’s center.
