Warm Pumpkin Cake

makes 9″x13″


20 ounces pumpkin puree
1 1/2 cup sugar
12 ounces evaporated milk
1 teaspoon ground cinnamon
1/3 teaspoon ground nutmeg
1/3 teaspoon ground ginger
1/8 teaspoon ground cloves
1 teaspoon salt
4 eggs
1 box yellow cake mix
8 ounces butter, melted
1 cup chopped pecans


Heat oven to 350°F.

Whisk together pumpkin, sugar, milk, spices, salt, and eggs.

Pour into a greased 9”x13” pan.

Sprinkle cake mix over the top. Scatter pecans over cake mix and pat down very lightly.

Drizzle with melted butter.

Bake for 30-40 min.

Serve warm.

This recipe sounded so mouth watering that I just printed it off and I am going to make it for Thanksgiving, because for the first time in more than 11 years I am having Thanksgiving dinner at my house with some friends and neighbors. I believe this is the perfect desert to have, especially when I can make it myself and it did not come all prepared. Thanks so much for sharing!

  3. I am craving the chopped kale salad that I enjoyed on Thursday, November 30 at The Cove. Is it possible to post it? Don’t try to condense it to a smaller amount, we can do that. Thank you!

    1. Good news, Mona! The chef replied back quickly. You will have to decide on the amounts based on your taste, but here are the ingredients: Shredded kale, shredded Brussel sprouts, shredded purple cabbage, cranberries, and mixed nuts. Enjoy!!

  4. Would love to have the recipe for the marble loaf pound cake that was served for breakfast after Veritas. It was so moist and the piece I took kept us going on the snowy ride home. Thank you for these wonderful recipes.
