Banana Pudding
Served at The Cove
Makes 4-6 servings

Ingredients
1 package (3.4 oz) instant vanilla pudding mix
1 cup whole milk
7 oz sweetened condensed milk
½ tablespoon lemon juice
1 teaspoon vanilla extract
8 oz heavy cream
2 tablespoons powdered sugar
Vanilla Wafers
Bananas, sliced as needed
Extra sweetened whipped cream as needed for topping

Whip the heavy cream and powdered sugar into soft peaks. In a separate bowl, whisk together the whole milk, condensed milk, lemon juice and vanilla extract. Slowly whisk in the pudding mix and continue whisking for 2 minutes. Fold the whipped cream into the pudding mixture 1/3 portions at a time. In the bottom of a 9”x9” casserole dish, spread an even layer of vanilla wafers. Spread sliced bananas on top of wafers. Spread half of pudding mixture over the bananas. Repeat wafers, bananas, and pudding.

Top with sweetened whipped cream.  For best results, make 1 day ahead of time and chill overnight.

  1. Well, folks, my mouth dropped to my feet when I read the recipe for banana pudding……….You are from the SOUTH ! Banana pudding is supposed to be made from SCRATCH. Only our Yankee friends make banana pudding from a box mix.

Poor Will . His Mama should have taught him better.

    LOL ……….. but , serious !

  2. Our church has a coffee house event every Tuesday. We serve free coffee and cakes as donated. This Banana Pudding will be a hit next week!

  3. I just tried to sign up to receive recipes from the Cove and after my email a request from FeedBurner stated “to help prevent spam, please type the text you see in the box above”. THERE WAS NO BOX ABOVE, and no place to type the text, thus could not connect. Please advise. Thank you.

    1. We tried it on our end and it is working fine. Would you please try again–it may have been a one time error. Let us know if it works and if not, we can add you to the subscription list with your permission on our end.

  4. I’m confused about the instructions…it says to mix the pudding mix, milk, condensed milk, lemon and vanilla. The next sentence says to slowly whisk in the pudding mix…. but it’s already mixed in from the sentence prior. I suspect you are supposed to mix the milks, lemon and vanilla and then slowly whisk in the pudding mix – is that right? Is sounds yummy.

    1. Kelly, you are exactly correct. Thanks for pointing that out. We are making correction on the blog now. Hope you enjoy the dessert! Blessings!

  5. I agree with Carole from Atlanta! We as Southerners, are proud of from scratch recipes! I stayed at the Cove with my husband and absolutely loved it. However, I told my husband, this food is not from scratch. He agreed, but said, it still is the most peaceful place he had ever been. And it is!
